A mixture of melted chocolate and cream, varying in proportion according to how soft it needs to be. When rolled into balls, ganache can be used to fill truffles, it can be whipped with butter to make butter cream or mousse, used to fill little tartlets, or melted and used as a pouring icing to give a shiny glaze to cakes. Store ganache in the fridge for up to 2 months, or freeze it for up to 6 months. Before use, bring back to room temperature.
