Fiddlehead Fern

The young fronds of the oyster/ostrich fern, which grows wild in Europe and America. The young shoots are usually boiled and served with a sauce, added to stir–fries or may be eaten raw in salads. Their flavour is similar to that of asdescriptiongus. Fiddlehead ferns are sold fresh or tinned.
