A salad of Syrian origin, fattoush is made with pieces of toasted pitta bread, cucumber, tomatoes, spring onions, pepper, lettuce and herbs. Fattoush means ‘moistened bread’ and traditionally the bread is added to the bowl first, then moistened with oil and lemon juice before the remaining ingredients are added. It is now fashionable to add the toasted bread just before serving so it remains crisp. The salad may be garnished with sumac and pomegranate seeds.
