Fried fish is covered with a warm spiced and herbed vinegar marinade to make this Spanish dish. Its origins are ancient, and it exists in various forms around the Mediterranean. It is usually served cold as an appetizer, and can be bought in jars. While this method is normally reserved for pickling fish, chicken and chillies can also be treated in the same way.
