A rich, sweet and fragrant vinegar made from white Trebbiano di Spagna grapes in Modena, Italy. The best balsamic vinegars, Aceto Balsamico Tradizionale de Modena, are made by blending very old (up to 100 years) vinegars with progressively younger vinegars (no younger than 12 years) from barrels of different woods. Each 100 ml bottle of this rare and precious liquid is certified by the consortium that was set up to approve its quality. The commercial variety, labelled simply Aceto Balsamico de Modena, varies considerably in price and quality.
