Bakewell tart is made from shortcrust pastry filled with a thin layer of jam and topped with almond cake. Traditionally, almond essence was used to give the Bakewell tart its characteristic flavour, but nowadays it’s more usual to see recipes that use ground almonds instead. The tart can be finished in a variety of ways: with a pastry lattice topping, with a sugar glaze or icing, or decorated with flaked almonds. The tart is named after the town of Bakewell in Derbyshire, England.
