Where did you grow up? Tasmania
When did you realise you wanted to be a chef? When I was about 17. Studying full time to be a lawyer I realized it wasn't what I loved and decided to follow my passion instead of the pay.
What does it take to be a successful chef? A love of food, hard work and creativity...
Worst job you have ever had? When working for a freelance agency I was sent to the Coles canteen at Eastern Creek. Quiet possibly my worst kitchen nightmare
What is your signature dish? It changes all the time as I am constantly discovering new and exciting ingredients and produce. More recently it would be - coconut, kaffir lime and chilli pannacotta
What can people expect from your restaurant? Amazing food created with quality produce. Personalized service and and unforgettable culinary experience
What is unique about your restaurant? Our menus are individually created to suit the ever changing and unique tastes of our clients. We focus of every aspect of the clients experience to Create unforgettable memories. Personalised Culinary excellence is the flavor of the day.'
What is the chef serving in heaven? The perfect Creme brûlée... I am on a world wide search. After researching in over ten countries I am still looking. France is the closest I have come
What is the most bizarre dish you have ever tried? Scorpion in Vietnam. I hand picked them.
What is one question people are always asking you? What's your signature dish? lol.
What is your biggest food indulgence? Chocolate... And cheese. Love a good Creamy imported Brie
What flavours/ingredients are your favourite to work with? Garlic, lemon zest and olive oil...always have on hand
Which three people would to invite to a dinner party? Matt Moran, gordan Ramsey and Jamie Oliver
What is your best tip for home cooks? Keep it simple. Fresh is best. When in doubt, throw it out. There are no rules. Experiment.... Read more.
