Guy Rubino is Executive Chef and Co-owner of two of Canada's most critically acclaimed fine dining restaurants, Rain and Luce. Guy also co-hosts the television series made to order with his brother, Michael.
Guy grew up in an authentic Italian family, where their quest for the freshest ingredients and intricate preparations of food were an everyday occurrence. From the preserving of fruit and vegetables, to the curing of meats and cheese, Guy's addiction to the kitchen was evident at a very young age. As a teenager, Guy worked in restaurants in the Niagara region in both "front” and "back" of the house positions. When the time had come to pursue a post secondary education, Guy secretly wanted begin a culinary career but decided to give one year of university a try.
He was quickly drawn back to his first love. Discussions with his brother soon led to a plan, and Michael and Guy decided to partner in a new and exciting restaurant and catering adventure known as Gourmet Greens. After the first year of operation, it was evident that the catering aspect of the business was most lucrative for the brothers and they focussed on that aspect of their operation. Guy found himself cooking at corporate functions, fashion shows, product launches, and many other high profile events. With the business flourishing, Guy took the opportunity to seek higher training and mastering his craft by studying and working in some of North America's most renowned kitchens.
After five years of training, Guy felt he was ready to open a fine dining restaurant and Zoom Caffe and Bar, his first internationally acclaimed restaurant, were launched. It was 1997 and Zoom's inventive and daring menu and design were simply ahead of their time. Torontonians were enthralled and instantaneously flocked to the brothers’ first restaurant concept. The success of Zoom, encouraged them to pursue their next venture, Rain.
With style and confidence, Guy locked his position as one of Canada's most exciting chefs when Rain took Toronto by storm in 2001. The concept for Rain was to create an Asian fine dining experience. Launched with a precise combination of food, service and design, Rain continues to draw domestic and international acclaim.
Shortly after opening Rain, the brothers began discussions with Food Network Canada about the possibility of a television series. Soon 'Made to order' was born. A show that would give viewers a stylized behind the scenes, look at of the inner workings of a fine-dining restaurant. The brothers partnered with Henry Less and formed Mercer Street Films, to produce Made to order - which is currently airing in over 100 countries.
Guy and Michael opened their highly anticipated third fine dining restaurant, Luce, as the first season of Made to order began airing. The Italian menu at Luce, is in homage to Guy’s culinary roots and is an exploration of authentic Italian food done in his unique style. It quickly became a critic’s darling and is regarded as one of Canada’s best Italian restaurants. With Luce located directly across the street from Rain, Guy can ensure that both kitchens continue to meet his demanding standards.
In addition to creating all of the recipes for Rain and Luce, Guy creates all the recipes for made to order and is currently working on recipes for a cookbook. He is an accomplished drummer and guitarist and in his rare moments of free time can most often be found making music. Guy also is an avid runner, to which he attributes his ability to work the long hours needed to oversee all of his projects.
