twentyeleven Restaurant/Bar/Lounge, Sydney
Ant Ewart isn’t an angry chef (see Ramsey, Gordon) or a naked chef (see Oliver, Jamie). He is however the charming Head Chef of twentyeleven Restaurant/Bar/Lounge - Potts Point’s new local. He prepares meals from the open kitchen at the centre of the restaurant, gracefully whipping up modern Australian meals and making Mr Ramsey and Mr Oliver look like they make a lot of fuss over something that can be a restrained, elegant performance.
Ewart trained at Alife restaurant with Michael Jaggard, who inspired him with his business acumen and passion; Jaggard built three restaurants from floor-to-ceiling with his bare hands. “The greatest memory of that time, even though it was not the easiest” says Ewart, “was chopping a tonne of wood each week to fire the hearth which we cooked all the fresh seafood and meat on.” Ewart believes his mother carved his future in food: “The roast dinners on Sunday were so lovingly cooked and followed with a passionfruit meringue roulade.” Frattelli Paradiso in Potts Point is his dining table when he’s not at home or work, as the staff are warm, the food is flavoursome and the wine list is always welcoming....
