Pavlova with Dried Apricots and Roasted Almonds

For someone who always proclaims I don’t really have a sweet tooth; I can’t resist a pavlova, however, it has to be crisp on the outside and soft in the centre with a chewiness too… I love to mix my cream with crème fraiche so it’s not oversweet and never add sugar to that, and my favourite of all is my apricots cooked in a verjuice syrup and then roasted almond flakes for the crunch. I just can’t resist this.

Chicken leek and mushroom pie

This has to be one of my favourite things ever for the family; firstly I would never make a chicken pie without starting off with a really good chook first and am lucky my daughter Saskia has her not only free range but totally vegetarian fed chooks that have such flavour. Making a béchamel by taking the butter to nut brown is just one of the many small things that allows for maximum flavour and lots of fresh herbs and mushrooms too; however it’s the pastry with so much butter and most importantly cooked so its bottom and top are both golden and cooked through. Totally delicious!

Neenish Tarts

Now, this is my most loved treat of my childhood. On the rare times when just Mum and I would go out alone without brothers tagging along, Mum would buy these beautiful tarts; half chocolate half vanilla iced top with jam and what was called ‘mock’ cream then. The pastry has to be as fine as fine; the jam in the base tart as tart and the ‘mock’ or buttercream with a little ginger added before icing carefully is an act of love for me.
