Does Dad need a little help in the kitchen this Mother's Day?
Kevin Horgan, Tassal Research and Development Manager, shares his favourite ways to cook quick, easy, healthy and delicious salmon meals for Dads that need a little hand in the kitchen this Mother’s Day.
Pan-fried – Your best tool in the kitchen is a good quality, heavy bottomed non-stick frying pan. Season salmon portions with salt and pepper and sizzle away, with a tablespoon of good quality olive oil, skin side down for about 5 minutes on medium heat. Flip over half way and cook for 3-4 minutes before removing to rest. Serve with some steamed veggies and a wedge of lemon.
Barbequed – Put a bed of chopped onion, garlic, celery and carrot in the centre of a square of foil. Place a skinless salmon portion on top and drizzle with olive oil and season with salt and pepper. Close each square up to seal and then barbeque with the lid down for about 10-12 minutes. Serve with a fresh salad.
Steamed – This method is the healthiest way to prepare salmon. Place a seasoned salmon portion in a bamboo steamer lined with greaseproof paper. Put the steamer on top of a wok containing about 1 litre of boiling water and steam 5-7 minutes. Serve on brown rice with fresh chopped chilies, coriander and a drizzle of soy sauce.
