Australian chef Matt Moran revealed a different side of himself during a new podcast.
In the new podcast, Can't Live Without, Matt Moran got real about kitchen secrets, family life and, erm, perfume.
The Great Australian Bake Off judge spoke with podcast host Mel Buttle about a range of things including his choice of cologne. (It's Hermes, ladies and gents!)
And while we're thrilled to learn about the weird and wonderful things Matt enjoys, here are some takeouts from Matt Moran's episode of Can't Live Without.
1. Eggs make the best dinner
You don't need to tell us twice! Matt has proclaimed his love for the breakfast-for-dinner way of life, often opting for a simple, no-fuss dinner, like a toastie or some humble eggs. Interestingly, Matt has a penchant for "dippy eggs", aka a soft boiled egg with some toast "soldiers" to dip in the runny yolk. Yum!
2. How to roast a chook
What's the secret to the best roast chicken? The answer is brine, apparently. Matt soaks his fresh chook in salt water and herbs, then dries it out in the fridge before popping it in the oven. Why? The brine and herbs provide a great, fresh flavour to the chook, and drying it out ensures the skin will crisp up in the oven.
3. Grow your own
Like most chefs, Matt can't go past simple wholefoods and homegrown goods. If you've ever visited one of his Chiswick restaurants, you may have noticed the herb and veggie gardens on site, which Matt says dictate to the chefs what is in season. Ask any chef and they will tell you that fresh produce is the key to amazing flavour.
4. A quality knife is the best investment
"It comes down to a really simple, good knife," Matt says. "I don't have a lot of gadgets." Matt advises us to forget the fancy tools - including a garlic press - and return to the time-and-tested method of chopping and dicing all your ingredients.
