Food blogger, Little Bits Of, is impressing brunch-lovers with her colourful, nutritious creation: sweet potato toast.
It's simple: if bread isn't your thing, opt for a slice of vitamin-C rich sweet potato. It's a great way to sneak more vegetables into your diet, and spice up your average breakfast! (It also looks rather pretty.)
You can still spread butter and Vegemite if it takes your fancy, or feel free to get creative with peanut butter, honey and banana, avocado, cottage cheese or even tuna.
Little Bits Of suggests cutting a large sweet potato into toast-like slices, no more than 2cm thick.
Pop it in the toaster and toast twice to cook through properly. Add your choice of toppings (melted cheese and avocado, anyone?) and voila!
