How to substitute dairy when cooking vegan

Yes, you can have your cake and eat it too.

Just because you’re living a vegan lifestyle, doesn’t have to mean saying goodbye to delicious desserts and dairy-based treats.

Chef Warren Mendes shares his top dairy swaps.

Coconut cream

If you’re craving a creamy treat, all you have to do is grab a can of coconut cream and leave it in the fridge overnight.

In the morning, scoop off the top layer and simply whip it up like you would usual thickened cream.

Coconut yoghurt

Warren recommends using coconut yoghurt in place of regular dairy yoghurt, as the consistency of this ingredient is thick and rich.

Custard

You can still make delicious custard by using cornflour as a thickener, instead of egg, and using any type of nut milk in place of regular milk.

Vegan pastry

You can still enjoy a delicious homemade pastry by making this simple swap.

Warren suggests using margarine instead of butter to make golden pastry.

Ice cream

There's no need to miss out on ice cream.

You can easily make your own dairy-free ice cream by freezing some bananas, chopping them up and giving them a whiz in a food processor, add a dash of maple syrup and you have instant vegan-friendly ice cream.
