Star Baker Suzy's strudel seriously impressed the judges in episode 8. Get her top pastry tips.

Suzy's a pastry pro and pulled out all the stops for her showstopper bake. She demonstrates her winning techniques in the video above.

Suzy's Pastry Tips

  • Filo pastry needs to be mixed really well before you rest it. If you don't get the gluten working and glossy it wont stretch. Let it rest for 30 - 60 minutes depending on the temperature.
  • When pulling out your pastry, use a clean cloth or a sheet so you don't get fluff in your pastry. Sprinkle the cloth with flour to prevent the pastry from sticking and gently tug the pastry to pull it out.
  • Double fold the delicate pastry and cut off the thick edge.
  • Cook the pastry through!
