Star Baker Monica Shares her Ombre Cake Tips

Monica was crowned The Great Australian Bake Off's first Star Baker for season two. Find out how she did it!

Sydney retail manager, Monica, is leading this season's baking pack, thanks to her stunning Berry Ombre Cake with wafer "paper" decorations.

As Maggie described: "It was beautifully presented and a real showstopper."

Like most first-time Bake Off contestants, Monica confessed to struggling with the competition time frame.

"One of the things I found the hardest was, trying to get things done in a certain amount of time," she told the camera.

"So, I really struggled to get the cakes cool enough to be able to work with them."

Here are Monica's top tips for aspiring cake-makers:

  1. Have fun: "Relax. There's no rhyme or rhythm or method to it. Just put things where you like it."
  2. Pick your colours: It doesn't matter what it is, whatever tickles your fancy, just go for it."
  3. Pick your flavours: "Again, whatever makes you happy. I like to keep things simple, but that's up to you."
