Steve Manfredi was born in Italy and migrated to Australia as a small child. A well-respected chef around Australia, Manfredi has opened and operated restaurants including Sydney’s Bel Mondo. More recently he has become renowned for his coffee brand Espresso di Manfredi.
The formula for his new book, Seasonal, is what makes it really stand out. Manfredi has compiled a list of produce based on the seasons. Each ingredient gets its own double page spread and is accompanied by a short blurb, a guide to purchasing and a list of compatible ingredients. Manfredi also provides a recipe for each ingredient.
His recipes are fresh and uncomplicated. The advantage to this is that you can branch out and buy a random item of produce in the markets safe in the knowledge that Manfredi will be able to guide you through a simple presentation to cook with it when you get home.
Among the many ingredients Manfredi explores are zucchini flowers (stuffed with two cheeses for spring), buffalo mozzarella (with walnuts, garlic and anchovies in summer), figs (roasted with gorgonzola in autumn) and beef (pan roasted with cracked pepper and rosemary for winter).
