The breathtaking shoreline in the Hunter region of NSW will be home to a new Bannisters hotel and restaurant.
Port Stephens, loved for its natural beauty, and pods of happy dolphins, is due to become a dining destination. Slated to open in late 2018, Bannisters has announced it will be expanding its footprint up the NSW coastline - Rick Stein included.
It'll be the third venue in the Bannisters coastal collection, joining two Mollymook locations - the original Bannisters by the Sea, and recently built Bannisters Pavillion (with amazing rooftop infinity pool).

The new 4.5-star hotel will occupy the site of the former Salamander Shores at Soldiers Point, and will house 80-rooms, including four luxury suites and one penthouse. Fifty of the rooms will feature views over the Karuah River, while others will have bushland vistas.
“It’s another beautiful stretch of New South Wales coastline, like Mollymook," Rick says. "My wife Sas has long been a lover of the Port Stephens area and even stayed in the old Salamander Shores hotel when she was 19. When we saw the landscape from the lookout above Nelson Bay we were filled with a sense of excitement to see an almost continuous vista of bays, headlands, peninsula and the open sea beyond.”

Bannisters at Port Stephen's has been dreamt up by the same team as the other South Coast properties. Tony Freeman is the architect, while modern beachy interiors have been crafted by interior designer Romy Alwill, and gardens are by Will Dangar.
As for what's to eat, Rick is excited about the local produce the restaurant will serve up. “The abundance of top quality seafood is a massive attraction as is the proximity to the Hunter Valley’s wineries. I will be working closely with Head Chef, Mitchell Turner designing a menu featuring local king prawns, yellowfin bream, flathead, calamari and school whiting, not to mention the fabulous oysters.”
