Potatoes are the ultimate comfort food and make the perfect base ingredient in any cook's winter repetoire. With many different varieties (Sebago, King Edward, Kipfler, Dutch Cream, Charlotte) and types (floury, waxy), there is a potato for every recipe or mood.

Choose potatoes that feel heavy without any green spots or sprouting eyes.

Store potatoes in a cool, dark spot for several weeks, but look out for sprouting eyes.

You can steam, microwave, boil, sauté, fry or bake potatoes, but depending on their varieties some potatoes take to different cooking methods better than others. For example, waxy Kipflers are great steamed, while floury Sebagos are best baked or boiled.

Everyone loves gnocchi, especially fresh gnocchi. It’s so easy to make, and when served with a simple tomato sauce is a perfect dinner party dish for vegetarians and non-vegetarians alike.

Jamie Oliver’s spicy Bombay potatoes are great alongside an Indian banquet. While A picnic or BBQ wouldn’t be complete without potato salad. Keep it simple with home-made mayonnaise or jazz it up with chilli, spring onion, sumac and fresh herbs.
