Cook and television personality Justine Schofield swears by three things to get her in a positive frame of mind.
Coffee, time to reflect outside and cooking up a healthy breakfast, are not only joys for Justine, but necessities in having a happy and productive day ahead.
To get you into the routine of having a positive morning ritual, Justine Schofield shares her delicious Simple Smoked Salmon Scrambled Egg recipe:
Time: 15 minutes
½ avocado, cut into 4 pieces
4 cherry tomatoes, cut in half
1 tbs. olive oil
Salt and pepper
3 tbs. pouring cream
Pinch of nutmeg
4 slices of smoked salmon
2 sliced sourdough, toasted
2 cheeks of lemon, for garnish
1. In a bowl, combine the avocado, tomatoes, olive oil and a good pinch of salt and pepper. Put to the side.
2. Crack the eggs into another bowl and very lightly whisk the eggs, cream and pinch of salt, pepper and nutmeg with a fork. Do not over whisk.
3. Melt the butter in a non-stick frying pan over a medium heat and add the eggs. Let it cook for 5-7 seconds and then with a plastic spatula bring in all the sides to the centre. Swirl the pan to let the runny egg cook. Bring the set egg, once again to the centre. Repeat the process until there is no runny egg left.
4. Divide the eggs in half over the toast. Finally place the avocado and tomato mix on the plate along with the salmon and lemon.
