Covering a complex cake will always be different depending on the design, it is very important that you have had experience in covering a round, square and shaped cake as you will be using all of your knowledge to cover a complex shape.
1. When you cover a shaped cake you had to think and work with the eyes and hands of a sculptor. With a complex cake these qualities are still going to be used, however you will also be working like an architect. It is very important before you cover your complex cake to work out your plan of attack. You may have to take measurements and use a calculator to work our how much icing you will use and what shape you will be required to create in order to cover.
2. Most complex cakes will have an icing seam where the icing joins; you need to work out the best position for the seam eg: Handbag sides, BBQ back.
3. For awkward shapes it is useful to cut away the excess icing with scissors to allow you room to work.
4. Quite often you have to put on icing sideways and this can be tricky but don’t be daunted - using a small rolling pin roll your icing up and roll around like unrolling a carpet.
