The three secrets to perfect pasta

Ever wondered how to plate up the perfect pasta dish every single time?

Now the code has been cracked with a world class chef sharing his secret to the art of cooking amazing pasta. 

Representing Australia in the upcoming Pasta World Championship, chef Nicola Pelligana of Vizio Sydney shares his pasta secrets for cooking a restaurant-quality dish, every time.

Cooking water

When it comes to delicious pasta, the water it's cooked in really does matter.

Nicola advises to add 6g of salt per litre of water to help the pasta cook and enhance flavour. "Save a spoonful to add to the sauce, it will help the pasta and sauce combine," he adds.

Finish it in the pan

When everything is cooked, Nicola says it's best practice to mix the drained pasta into the pan with the sauce. 

"Transfer the pasta and reserved cooking water to the simmering sauce; the heat will help the pasta take on the delicious flavours," he explains. 

Serving it up

If you've often wondered how restaurants get pasta to look mouth-wateringly shiny, Nicola reveals the simple hack. 

"Add a dash of olive oil and grated parmesan and mix until the pasta is glossy. Serve and eat immediately," he says.
