Yum! The healthy cinnamon scroll that takes just 60 seconds

A delicious and healthy cinnamon scroll for breakfast is the perfect way to start the day. 

But now you don't have to head to the bakery or spend ages in the kitchen - this version takes just 60 seconds and is actually healthy! No, really!

The mouthwatering, gooey scroll recipe, which you make in a mug, has already been shared nearly a thousand times as it's low in fat and sugar and can be made gluten-free, and vegan-friendly!

Instagram baker @cakeontherun posted the video of the cheat's cinnamon scroll made from every day store cupboard ingredients.

Here's the recipe:

Easy, healthy 60-Second Cinammon Scroll, by Laura Nightingale

Ingredients (serves 1)

70g self raising flour
70g any yoghurt (vanilla or plain)
1 tsp margarine or nut butter
1 tsp sugar, sweetener or maple syrup
1 tsp ground cinnamon
Method

  1. Get a large mug and mix the flour and yoghurt together to form a dough.
  2. Put the dough onto a floured surface and roll into a flat sausage shape.
  3. Spread over the margarine, sugar and cinnamon.
  4. Roll up with your fingertips and pop back into the mug.
  5. Microwave on high for 60 seconds (or a few seconds longer if needed).
  6. Frost with thick vanilla yoghurt and a sprinkling of cinnamon sugar or icing sugar mixed with water. Or if you're feeling naughty make a simple buttercream by mixing 1 tsp margarine with 2 tbsp icing sugar to a smooth paste.
