Great British Bake Off star Rahul Mandal's biggest bake yet

The 2018 winner shared his latest creation - a giant wedding cake with 28 layers.

You may remember Rahul Mandal from the most recent series of The Great British Bake Off. He won hearts all over the world with his humble nature and gorgeous bakes.

His work in the kitchen has continued long after the show, with Rahul enlisting the help of 15 friends to create a stunning masterpiece for a friend's wedding recently.

"Weddings are special! It is more than communion of two people, it is about celebration of love with friends and families," he shared on Instagram.

"Needless to say, I never baked a cake for 160 people. This cake had to be huge, but it also had to stand up, for about 8-9 hours! It is more than just a cake, it is for celebration for their dream day!

"It was a challenge: an engineering challenge. And I get an amazing team of people to work with. I can’t thank you all to help me to make it happen."

The bake details

The masterpiece is 8 individual cakes, with a whopping 28 layers - 14 chocolate and 14 coffee sponge flavoured.

The chocolate ones were sandwiched with chocolate buttercream and decorated with golden chocolate collars. The coffee cakes were sandwiched with mocha pastry cream and coated with white chocolate Swiss meringue buttercream and chocolate drips. Delicious!

Rahul said of this huge achievement: "Cake is more than the sponges and creams, it is all about the effort gone in: to bake, to decorate, to assemble, and above all to clear up all the mess left after baking. I cannot thank enough for every single one who helped!"
