Creating the Perfect Prawn Dumplings

Donna Hay Shares her one simple trick for creating perfectly steamed dumplings.

When steaming dumplings, you’ll need to line the base of the bamboo steamer to stop any sticking. You can buy ready-made parchment liners from Asian grocery stores, but it’s just as easy to make your own, here's how.

  • Take a square of non-stick baking paper, a little larger than your steamer, and fold it in half, point-to-point, to make a triangle.
  • Fold the triangle in half 3 or 4 more times (depending on the size of your steamer), then snip tiny incisions along the folded edge to make the air holes.
  • Holding the pointed end of the triangle at the centre of the steamer (to measure its radius), trim the wide end to fit.
  • When you unfold the paper you should have a round that’s the same size as your steamer, perforated with little diamond-shaped steam holes. Press your lining gently into the base of the steamer, before adding any dumplings.
