A new Sydney bar is serving an 'Australian Negroni' on tap

A new Sydney venue is serving up one of your favourite cocktails on tap.

The Endeavour Tap Rooms is a new venture from Endeavour Vintage Beer Co and Applejack hospitality, aka the guys behind Bondi Hardware and The Botanist. 

The bar, located in Sydney's historic borough of The Rocks, occupies one of the longest-running colonial hotel's in the city.

The refurbishment of the venue, which dates back to the 1800s, still shows glimpses of 120-year-old wallpaper, beautiful arched windows and even a small window where women were once had to line-up for service as they weren't allowed in main bar.

While craft beer lovers will certainly be stopping by for a uniquely Aussie swill, the Tap Rooms also offers a Negroni on-tap.

"When we started piecing together the drinks angle for the venue, we obviously wanted there to be a focus on the tap offering," Lachy Sturrock, Applejack's Bars Manager said. "Cocktails are a big part of what we do at Applejack so we thought why not have a cocktail on offer from the tap."

The Tap Rooms prides itself on its locally-sourced offerings, so even their Negroni is made of purely Australian ingredients.

"For our Negroni we wanted to go for an all Australian line up. We partnered with our good friends at Four Pillars Gin, added Applewood Red Okar Bitter - out of the Adelaide Hills - which substitutes the original Campari, and added Regal Rogue Bold Red vermouth to finish it off," Lachy Sturrock, Applehack's Group Bars Manager.  

"The result is a slightly sweeter cocktail, with welcome hints of orange and Australian botanicals - simple and refreshing."
