Celebrity Chef, TV Presenter and author Ben O'Donoghue is one of Australia's most loved chefs - and a busy one at that! We chat to Ben about his inspiration in the kitchen and steal some of his favourite beef recipes and cooking tips.
1. What projects are you working on at the moment?
I’m pretty busy at the moment with a new book- a bible on meat. A new restaurant project and a number of events and demonstrations around the country.
2. Who is your inspiration in the kitchen?
My inspiration in the kitchen are the seasons, and the produce that’s available and at its best during that time. I love discovering different cultural flavours. Each month at the restaurant we focus our Friday night menus on different cultures and cuisines from around the world. In September we focus on Japan and we are currently doing Liguria Italy.
3. What is your favourite comfort food?
My favourite comfort food is probably Vietnamese Pho- a combination beef soup with tendon, tripe and sliced beef.
4. What are your top tips for cooking with beef?
I think the most important thing in regards to cooking beef is to start with the best quality/breed you can afford. I love grass fed beef for a deeper complex flavour. Also make use of secondary cuts that require a little more preparation or cooking time like skirt hanger steak or brisket.
5. Where are your favourite places to dine out in Australia?
There are so many places that I would like to try that I just haven’t had the time to get to. I have a few favourite places in different cities that I go to when traveling; Chin chins in Melbourne and Crab Apple kitchen in Melbourne and I am still yet to get to the newly refurbished Four in Hand in Sydney. I love Ice bergs for the view.. But I always end up in China town in any city!
6. Where is your favourite holiday destination?
We love the northern rivers area and really enjoy hanging out in Byron bay / bangalow with our friends and family. Niseko Japan for skiing and want to return to Italy to travel and eat. Would also love to get to LA and visit my old mate Curtis Stone and his family there and eat at his new restaurant!!
7. What’s the best advice you’ve ever received?
Always employ people that are better than you or want your job!
