10 Vegetarian Dinners to Cook Tonight

Whether or not you're a vegetarian, you will enjoy these tasty, nutritious dinners.

If you're planning your dinners for the week ahead, why not try a meat-free monday -- or a meat-free week -- with these delicious veggie-filled recipes.

1. Eggplant and Green Bean Curry

Try a dish completely from scratch with the delicious curry paste used in this recipe by healthy-eating queen, Lee Holmes. The beautiful eggplant, and additions of lime and coriander make this dish both light but satisfying.

2. Silverbeet and Ricotta Spanakopita

Spanakopita is essentially a Greek pie. This filling is a classic favourite for vegetarians, and is generally a winning food combo! Plus, who can go past a buttery, crisp pastry?

3. Beetroot Gnocchi with Pumpkin, Walnuts and Gorgonzola

Who could resist such a gorgeous dish? Sure, it's full of flavour and nutrients too - but look at the colour! Beetroot, pumpkin and gorgonzola are perfect together, but don't skip the walnuts for the extra crunch.

4. Brilliant Veggie Burger

Avo? Onion rings? Spicy vegan mayo? Jamie Oliver really hit the veggo jackpot with this one. A good veggie burger is hard to perfect at home, so give Jamie's recipe a whirl and feel the flavour! 

5. Vegetable Carbonara

This recipe still contains bacon but, thanks to the extra veggies, little is lost if you take it out. This dish is perfect for one of those evenings when you're craving creamy, carb-heavy, comfort meals.

6. Halloumi Tortillas with Avocado Salsa

This is the perfect fusion dish. Halloumi makes the perfect vegetarian filling for a fresh Mexican taco, and works fantastically with avocado. 

7. Stuffed Vegetables

Greek cuisine is at the height of popularity at the moment, and these stuffed vegetables are the perfect, easy way for you to get on the trend in your own kitchen.

8. Zucchini and Cannellini Bean Lasagne

This is a staple for England's popular Hemsley sisters who are all about a healthy feast. Zucchini is a fabulous substitute for pasta, and the beans maintain a great level of protein for those who would usually relish in a rich meaty meal.  

9. Turmeric Tofu and Cauliflower Curry

Turmeric really is the spice of the moment, with many are praising its supposed ability to prevent Alzheimer's disease, cancer and heart conditions. It's also pretty tasty!
