While in Kyoto, Nici notices that there is structure and order in the city that extends all the way to its food. Nici admires the fine balance and immaculate presentation of Japanese food, a trademark of the high-end cuisine in Kyoto. She takes part in an ancient Japanese tea ceremony, trying her best to remember the delicately-tuned format and rules of the ritual. Back home, Nici prepares tempura vegetables, teriyaki chicken and green bean salad with sesame dressing, mirroring the Japanese tradition of serving up lots of little dishes and condiments at mealtimes.
