Stefano takes celebrity chef Mark Olive on his first trip down the river in Mildura. Using indigenous herbs and spices, Mark cooks his special pan friend Barramundi on Salsa in Stefano’s restaurant kitchen. Stefano heads back to the Cantina where together with his apprentice chef Whitney they make Ricotta Gnocci with a rich Gorgonzola Sauce. Next up, Mark’s back in the Cantina to cook a Smoked Kangaroo Salad then Stefano, Mark and Whitney head off to Lake Mungo a beautiful and sacred National Park – afterwards Mark fits in one more scrumptious dish - his famous Kangaroo Tail Soup.
