Stefano's Cooking Paradiso

Stefano’s Cooking Paradiso sees the much awaited return to television for celebrated chef and restaurateur, Stefano de Pieri (A Gondola on the Murray). In this series, Stefano takes us on a culinary adventure around the Sunraysia/Mallee region, which produces a vast majority of Australia’s meat, fruit and vegetable. Stefano uses local produce for his special Italian/Australian dishes, combining traditional Venetian techniques with genuine outback gusto. Stefano will hunt, gather and cook his way through spellbinding locations – a houseboat on the great Murray River, an intoxicating taste test in sprawling vineyards, a citrus feast in picture-perfect orange groves, and even a sunset BBQ on a spectacular salt lake.

    I think that Stefano is a cook rather than a chef...or at least he used to be a cook! I live in Mildura, so he is very well known around here. He is a terrific ambassador for our region and I look forward to him promoting us even more!

      Glad you enjoy the show! It took us roughly 8 weeks to complete the shoot in Mildura. Saturday's episode is Olive Oil - you'll love it!

    Stefano's jar of caramelised onions are so delicious and the best caramelised onions I've bought out of a jar and better than my home made ones. Not sure if he still sells these, but if he does, get one if you can.

    Stefano, please could you please tell me when making the panettone, it does'nt mention when to put the 2 egg yolks and the 1 egg, in the recipe. And also is 5g of yeast correct?     Has anybody tried Stefan's Panettone yet? If so when did you ad the 2 egg yolks and the 1 egg for the second part of the dough? Also is 5g fresh yeast enough? Please can someone get back to me asap Dominique

      Hi. The eggs are mixed in with the dough at the start and the yeast is 5g of DRY yeast. Thanks for watching.

    Stefano you are a legend, both my wife and make it a ritual to view your show, being from italian decent many of your dishes and recipies are familier to us.     The potato spaghetti machine is a spiral or turning slicer. These can be purchased as an attachment to a mandoline slicer. Try any kitchen gadget shop.

    I absolutely love this guys cooking, he is bright, funny, speaks like the ordinary man - without swearing every 2 seconds like Gordon Ramsay. He just' makes cooking and also preparing look so easy. What a little gem he is in our state of Victoria. I wish he was in Melbourne, what an amazing success he'd be here too !!!
