About the show

Follow host Maeve O’Meara on a culinary globetrot across Australia where she guides us through thirteen delicious cuisines.     I have a hard time finding the recipes again after the program is finished. I've typed in the name of the recipe, but the prompter asks a ludicrous question: Name of recipe : southern fried chicken from Food Safari; prompter question: Did you mean strong flour!!!!!! This happens with MOST questions I put to lifestyle food recipes. Can someone explain why and how to over come the problem.

    We Also love this show, it is very informative, as we have never been able to travel to these countries and places, and love the food. My husband is now hooked as well on your show, we would like to request more shows to be viewed on the week-ends. Maeve, do you actually like everything you taste from the guest chefs? My husband noticed you love everything everyone cooks? Is this actually possible?

    I've been watching this show for a very long time and although I am a fan, I am very disappointed that Food Safari never showed Bengali or Bangladeshi food. Food Safari covered Indian, Pakistani, Sri Lankan and even Persian food but failed to show Bengali/Bangladeshi cuisine?!?

    Hi Im Nateisha Chandrasena im only twelve years old and im half Austrailian and half Sri Lankan, me and my family love to watch food safari but we think the Sri Lankan food episode was not very good the only curry that was right was the pumpkin curry and sri lankans dont eat scrammbled eggs its not traditional and defenitly not with string hoppers sri lankans never use blenders they use a pestal and moter even in australia my dad uses it to make his curries. on Tv the chicken looks to dry and it was the wrong recipie my dad was laughing at it. The guy who made the coconut sambol was completely wrong. String hoppers are not hard at all my 8 year old brother Kenley Chandrasena can make them. The Dessert Wattalappan was totally wrong its only coconut milk not cream you dont put honey on top if you made it right. lots of traditional foods are missing such as fish ambulthial, coconut rottie,ecspesially milk rice with lunumiris and more. After that episode we were shocked. Me and my family think that the episode should be redone with proper sri lankan people. We really Appriciate you and would be happy if you did that.

    I love this show and yes, Maeve is a Natural. A lovely lady indeed who is warm and great to watch. Food Safari is such a fabulous show - rich in information and sheds light on many culinary traditions. Never thought I would be tempted to try Japanese cooking but after watching the Japanese episode I am going to try. That's the beauty of it. Most of the recipes are very simple and accessible to the every day food lover. Keep it up Food Safari.... You are well loved.

    I tried to find it for you but without a full name I couldn't help BUT why don't you google Food Safari then once in there highlight cuisine "Korean & you will get all the recipes that were featured on the show I saw one called Bulgogi was that it?     Hi, my name is Peter and I would like very much the recipe for the salt & pepper squid / calamari shown in episode 7 Chinese by the chef Ying Tam. Most appreciative thank you.

      Ingredients

      500g fresh calamari 2 tbsp self raising flour 1 tbsp oil Cornflour Vegetable oil, for deep frying 4 green shallots, chopped 2 cloves garlic, chopped 1 red chilli, chopped 2 tsp Shaoxing wine Five Spice mix 1 tbsp ground ginger 1 tbsp celery powder 1 tbsp chicken stock powder 1 tbsp salt 1 tsp five spice powder

      Preparation Clean calamari by pulling the tentacles from the body. Wash out the tube and remove the clear 'backbone'. Remove the skin, if desired. Cut tentacles from the head and discard heads. Cut tubes into triangles, this helps them to curl during cooking.

      In a bowl, mix self raising flour, oil and a little water to make a paste. Place calamari pieces and tentacles into the bowl and coat well. Then sprinkle each piece with enough cornflour until the pieces are dry.

      Combine all ingredients for five spice mix and set aside.

      Heat enough vegetable oil for deep frying in a wok. Add calamari, in batches and cook until golden and crisp. Remove with a wire basket or slotted spoon. Repeat with remaining calamari. Drain off oil.

      Add shallots, garlic and chilli to wok. Cook for 30 seconds until aromatic. Return squid to wok and add 2 to 3 tsp of the five spice mix. Toss well to combine. Add Shaoxing wine, toss and serve immediately.

      Ingredients

      6 tsp powdered gelatine ¾ cup caster sugar 1 litre soft mango ice cream 75ml evaporated milk 1 cup crushed ice 1 large mango, peeled seeded and diced

      Preparation Stir gelatine and sugar into 1 cup of boiling water until thick and syrupy. Slowly pour into a glass bowl. Stir in ice cream, evaporated milk, crushed ice and diced mango.

      Ladle into bowls or glasses and chill for about 2 hours until set.

      The following recipe is from Safara Food show on India

      This is a famous Kashmiri dish and it's something that everyone loves as the lamb becomes so meltingly tender and the spices smell so enticing as you’re cooking them. It's easy to make at home if you have all of the ingredients ready before you start. I use the same weight in onions as the meat – so 1kg meat to 1kg onions. The choice of pan is also very important – you need the ingredients to sit ¼ the height of the pan, so it's quite deep and it should have a heavy base to retain temperature.

      Ingredients

      ¼ cup vegetable oil 3 bay leaves 2 tsp whole cloves 3 black cardamom 1 tbsp green cardamom 1 piece cassia bark 1 tsp fennel seeds 4 small dried chillies 1kg red onions, sliced ½ tsp salt 1 tsp turmeric 1 tsp chilli powder 3 tsp ground coriander 2 tsp fresh ginger paste 2 tsp fresh garlic paste 1 tbsp chilli puree 2 tomatoes, chopped 1 tbsp tomato puree 1 kg cubed lamb leg or shoulder 2 tbsp chopped coriander leaves Tomato wedge, julienned ginger and coriander sprig, to serve

      Preparation

      Heat enough oil to cover the base of the pan until almost smoking. Add bay leaves, cloves, black and green cardamom, cassia bark, fennel seeds and dried chillies. The black cardamom is the most fun – it always explodes and all those flavours go into the oil. Then the onions and some salt so the onions caramelise faster…you need them brown and sweet for Rogan Josh.

      While the onions are cooking, measure out the powdered spices. Add the ginger and garlic pastes to the pan then the powdered spices. Stir in chilli puree and a little water to stop the spices from burning. Add tomato and tomato puree and a good pinch of salt and stir well to combine.

      Now turn the heat up high to add the meat. You want to sear the meat. Stir well so that all of the meat pieces are coated. Add a little more water.

      Cover with a lid and cook for 35-40 minutes.

      Just before serving add the chopped coriander, but don't cook it.

      Garnish with tomato, ginger and coriander.

      INGREDIENTS

      Chermoula Marinade

      2 cloves garlic, chopped 1/2 preserved lemon, rinsed and thinly sliced 2 onions, chopped ½ birds eye chilli 1 tbsp sweet paprika 1 tbsp ground ***in Salt 2 tbsp chopped fresh coriander, stems and leaves 2 tbsp chopped fresh parsley 1/2 teaspoon saffron threads, soaked in a little water 1/2 cup olive oil 2 bay leaves, torn in half

      1 whole chicken, size 10 or 12 1 tomato, chopped 1 onion, chopped 2 large potatoes, cut into wedges 1 onion, sliced 1 tomato, sliced 150g pitted green olives 1 bunch fresh coriander, chopped 1 cup water 1 preserved lemon, cut into 6 segments.

      PREPARATION

      Marinade

      Process all ingredients together in a food processor until finely chopped and thoroughly combined. Leave for 30 minutes before using. Can be stored in the refrigerator for up to seven days.

      Wash and dry the chicken and remove backbone, wing tips and any excess fat. Cut into pieces. Rub all over with ½ of the chermoula marinade and refrigerate overnight or for at least 2 hours.

      Combine the tomato and onion with a little more chermoula and spread into the base of the tajine (this will prevent the chicken from burning on the bottom).Arrange chicken pieces in the centre of the tajine on top of tomato mixture. Coat potato wedges with chermoula and arrange around chicken. Top with onion slices, then tomato slices and olives in between the potato wedges.

      Mix chopped coriander with remaining chermoula and water. Pour over mixture. Decorate top with preserved lemon wedges.

      Cover tajine with lid and cook on a very low gas heat for 45 minutes. Do not stir or lift the lid during the cooking process.

      Serve the Tajine directly to the table and impress your guests with a waft of fragrant steam when it’s time to serve with couscous and harissa.

    I just watched the show tonight (31st Dec) on the lebanese food!! It just looked soooo delicious, completely changed my way of thinking of how lebanese eat. I wondered if anyone knew what it was the chef put on the salmon that he cooked, it looked like babaganoush but I dont think so!!!

    I've been watching cooking shows for years (Jaimie Oliver, Ainsley Harriot, Hugh Fernley Whittingsthorpe, Gordon Ramsay, etc, etc, etc) - but Food Safari is the best!!! I'm now a fan & the fact that this is an Australian production is EVEN better. The show's host, Maeve, is a natural! I love the show so much that I'm going to buy the full series on DVD (& I don't often buy DVD's). Can't wait to enjoy future episodes!!!
