Born in Melbourne but raised by the beach on Queensland’s Gold Coast, one of the reasons a career as a chef appealed to Peter Evans was the lure of surfing all day and working at night. After opening his first restaurant, Pantry, in Melbourne’s bay side suburb of Brighton in 1993 with his brother David and his brother’s best friend, Daniel, Pete moved to Sydney in 1996 where the team established Hugo’s in Bondi, Hugo’s Lounge in Kings Cross and Hugo’s Bar Pizza. The latest addition to the group is the waterfront Hugo’s Manly which opened in 2008.
Pete is a regular at cooking schools and food events around the country. He has written two cookbooks, “Fish” and “My Table” and has worked as a TV presenter on both The LifeStyle Channel and Channel 9.

Udo Edlinger, is a fisherman through and through. He once tried to give up fishing and it was the most terrifying weekend of his life!
Udo has lived in Sydney’s famous beach suburb Bondi, his whole life and if you ask him, he’ll tell you that Bondi is where he’ll always be.
Together with his best mate and brother in law Pete Evans, they journey around the country in search of the best fishing experiences. The deal is – Udo is going to teach Pete how to fish, Pete is going to teach Udo how to cook. Easier said than done, when you deal with a guy who uses the smoke detector as a cooking timer.
From the first time he ate solids, fish has been a prominent ingredient in Udo’s life. Udo learnt how to fish as soon as he could walk and he hasn’t stopped. At any given free moment he has, Udo can be found on the rocks of Bondi below his home or in his tinnie just off the shores – rod in hand.
Even though Udo believes that work is for those who don’t know how to fish, he does have a daytime job, the sort of occupation that only a passionate fisherman could have – he owns and runs a successful boat brokerage – ‘Absolute Boat Brokers’ and he is also a keen surfer, he loves to dive and in keeping with all the action based activities in his life, he loves to Ski.
