What does the owner and chef of one the city’s hottest restaurants get up to on his only day off? If you’re Chuck Hughes, you cook!

Serving up rustic dishes for his family, friends and business partners, or in his words, "all the people that make this restaurant a success." A passionate cook and a rising star in the Canadian food scene, Chuck opened his first restaurant, Garde-Manger in the heart of Old Montreal in 2006. It soon became his playground - a vintage crab-shack come underground club where he could put his magical spin on comfort food, and indulge his fantasy of creating decadent meals served up to his favourite rocking soundtracks. From making hangover cures for his friends and cooking for competition restaurant staff to conducting “research” as to what his female customers want in a meal, Chuck’s Day Off has it all.

Join Chuck on his day off as he prepares good, honest food for his family, friends and staff while juggling the rock ‘n roll reality of running a restaurant.

    tried to see if he had posted a recipe for fresh chorizo from a recent "Day off" episode in Mexico, and Cooking Channel has really screwed up their website. Every time i tried to leave the immediate page, it would start to go, and then go blank. Something with Java script. BIG problem. cannot access any of the recipes from any of the chefs. I wonder how many viewers they will have to lose before fixing this problem. Really not enjoyable to watch a show and not be able to find the recipes on line. Cooking Channel is THE worst. I hope Chuck gets a show somewhere else (hint!)

    when me and my brother (he was studying to become a chef back then) first watch his shows, we are like...OK, THATS HOW WE WANT OUR RESTAURANT LOOK LIKES! I mean, the kitchen definitely! And, yes, I am learning a lot from CHUCK... he made cooking so fun! I wish I can go to his restaurant some time.. Love from Malaysia

    Chuck is Awesome. I love his edge and hip way of cooking. I am a huge fan and plan to visit his restaurant soon. I watch the show everyday and I love it. I have made several of his dishes and my guest love the food. Very practical. MY FAVORITE CHEF. I asked for his cookbook for Christmas and none of my friends could find it so I am waiting for one from you Chuck! God Bless you gift of cooking!

    Chuck is not your typical "cookie cutter chef." I love the fact his mother prepares the desserts for the restaurant, it's so hard to be involved with family in any type of business venture. And the tattoos; down right sexy. Curious...I haven't heard a mention of a wife, girlfriend or any part of Chuck's personal life. I'd love to read a bio.

    I was just at Garde Manger in Montreal 2 weeks ago and had the duck on a baked potato, with asparugus, and I think egg plant! It was amazing...so was the cream cheese spread with the bread, the wine, the tea and the service...thanks to the staff for making room for me to experience the best duck meal ever! Missed you Chuck! Blessings on your business!

    I've been to Garde Manger in Montreal and I must say it was the BEST dinner I've had. I started with Jerk spice crab legs, the tower of seafood containing, oysters, mussels, shrimp and more crab legs and finished with a deep fried Mars bar and home made vanilla ice cream - SIMPLY HEAVEN!

    my name is nadia i love your show chuck and your lovely tatooes and your french accent anyway i dont see you on the usual time slot on food network chuck i usually see u on every tues at 730 pm and 1200 noon on saturadays on the food network why did they cancel you and your tats and your lvoely show your a an extremely gifted and great looking french man i would love to see you on tv again i hope to see you in the near future keep up your good cooking and your wonderful culinary skills you are a true culinary artist in my mind ciao chuck nadia
