About the show

BILL’S HOLIDAY is a seven-part series featuring chef, restaurateur and food writer Bill Granger, showcasing over 40 recipes.

Part-personal pilgrimage and part-travelogue but with the emphasis firmly on food, in HOLIDAY, Bill celebrates the varied produce of Australia from the cooler climes of the south, the tropical and exotic north, the arid red centre and the bounty of the seas, and explores the diversity and physical beauty of his Australian heritage.

In BILL’S HOLIDAY, Bill will meet the characters who are devoted to their mandarins or squid or salt bush lamb, taking inspiration from their anecdotes, their dedication and their spectacular environments. Via Bill and these focused families and individuals, we will get an insight into the culinary fabric of Australia and the history of its food culture. Each episode of BILL’S HOLIDAY features the food of Australia and Bill’s trademark fresh and seasonal dishes, joyful and uncomplicated as ever, and accessible by all, wherever they happen to live.

    125g melted butter, cool. add 90g butter, stir until it starts to dissolve then add 175g plain flour and salt. push into a greased tart tin. do not rest. 15 mins 180C. Cherry filling- i didnt get the amount of cherries he used but if you keep going down on the comments i think someone has it. 2 eggs, 2tsp vanilla extract, 2 tbscaster sugar, 2 tb plain flour, 3/4 cup cream, stir to get rid of lumps add cherries. sprinkle base with 2 tbs almond meal. 40-50 minutes 180C Goodluck everyone. I hope to be able to try this soon.

    Does anybody know the recipe's name and ingredients that include mixing almonds, pine nuts, sunflower seeds, shredded coconut, and a drizzle of oil, baking them for about 30 minutes at 200 degrees (or for 20 minutes at 300 degrees)? I'd like to make it, but wasn't sure if I was to add the coconut before or after baking the nuts. It was served on yogurt and had a berry mixed in with it. I figured Eddy's Vanilla Ice Cream would suffice :O Thank you.

    It would really be nice if all the recipes from each episode were posted on this site. I'm from the states, Bill's books are so hard to get here. And "Bill's Holiday" cookbook is going in several places for over $150USD. I don't know any reason for such a shortage on his books other than supply and demand--even difficult to procure through Amazon.com. He's a fairly new TV Chef in the states...and a big hit!

    I'd really like to have the simple Rice Pudding recipe that is made on the stove top...and not baked. My mother is 87 and claims that it is the same recipe as my Grandmother's--a dish she's not had for over 55 years. I would love to make if for her...all other rice puddings I have made her failed the taste test. If anyone can help me, I'd truly appreciate it.

    I lived in Australia in 2004 and loved Bill then. His cookbooks were the only ones I had while we were there! So glad to see him on American television. Plz add a facebook page!

    It was 1/2 cup sugar 175g flour and the butter in the base. 2 eggs, vanilla, 2 tbspn flour I think a cup of cream, cherries, a few tablespoons almpnd meal. That's it I think.

    Really LOVED this show, it captured beautifully the laid-back Aussie atmosphere. I also loved that you didn't stick to the traditional 'foodie' areas (ie. the wine regions) and ventured out to less well-known areas. The episode on the Tambo races made me teary with nostalgia. Please Please do another series Bill, you were the highlight of my week.

      I too having been searching high and low for the recipe: - 375ml coconut milk 500ml milk 1 cup of Arborio Rice 1/4 cup castor sugar 1tsp vanilla extract or vanilla bean paste Preheat oven to 160 degree C Lightly grease 1.5Lbaking dish Combine all ingredients and stir well Cover with foil and put in the oven and cook for 45 mins or until thick and creamy Serves 6 Hope it works well as I am going to cook it later on this week

    The recipe for the Mandarine Puddings is: (I recorded this show) Mix together - 4 egg yolks, 3 Tbl sifted flour, zest & juice of 1 mandarine & 110gm caster sugar, then add 2 Tbl melted butter & 200ml milk & mix. Beat the 4 egg whites with 2Tbl Caster sugar until stiff peaks form then add (1/2 at a time) to the main mixture, incorporate with a metal spoon gently. Spoon into small, greased ovenproof dishes & bake until golden brown, about 15 mins at 180. Serve with thick cream and a few pieces of crystallised mandarine peel.

    For the 'mandarin puddings' add 4 eggs separatedand 3tbp flour to egg yolks and mix, then add zest and juice of mandarin, 110g caster sug and mix next add 100ml milk and a few tbsp melted butter. beat egg whites in a separate bowl with a couple of tbsp of caster sug until stiff peaks and gently fold in to the other mixture, half of egg whites at a time, dont over mix. spoon in to greased ramekins and bake at 180 until golden

      As I have the book I shall oblige you with the recipe: CORIANDER CHILLI STUFFING Put the following into a FOOD PROCESSOR - 3 large handfuls of CORIANDER leaves & stems, - 45 G (1/2 cup) DESSICATED COCONUT - 4 LONG GREEN CHILLIES, seeded & roughly chopped, - 4 GARLIC CLOVES, chopped - 2 teaspns GINGER, grated -MIX all in a food processor until finely chopped. Stir in juice of 2 LIMES - & 2 teaspns BROWN SUGAR, & season to taste with Sea Salt & Freshly Ground Pepper. Pre heat Oven to 220oC ( 425oF/Gas 7), Rinse & pat dry 1 X 1.6 KG (3lb 8oz) Free Range Chicken. - With fingers CAREFULLY loosen skin over Breast of chicken & down Thigh area, Push half the stuffing under the skin, spreading to cover BREAST & THIGH, Put remaining stuffing inside the cavity of chicken. Tie legs together with kitchen string. Place chicken, BREAST UP in Large roasting pan,( I would spray pan with non stick oil in can - NO FRILLS $2.) drizzle with Olive Oil, season with S & P Roast for 20 MIN, then REDUCE oven temp to 200oC (400oF/Gas6) & roast for another 50 minutes or until juices run clear when you *** thickest part of thigh (COVER CHICKEN with FOIL if it's browning too quickly). Let the chicken rest for 10 minutes before carving Serve with coconut gravy, roast potatoes & steamed greens (my choice would be broccoli/sugar snap peas) Mary-Leigh if you want the recipe for the coconut gravy or have any hassles you can email me - krystyna6@me.com otherwise ring your local library & see if they have the book I do not think I left anything out DO NOT FORGET TO REDUCE OVEN TEMP after 20 minutes on high temp I hope you make this recipe & enjoy the chook it sounds yummy Regards Krystyna
