Chilled Gazpacho


Chilled Gazpacho

Ingredients

  • Red Capsicum (Deseeded) 1
  • 1 Yellow Capsicum (Deseeded)
  • 1 Green Capsicum (Deseeded)
  • Large Truss Tomatoes (1 per person)
  • Garlic Cloves (1 per person)
  • 1/2 bulb Fresh Fennel
  • 1 Jalapeno
  • 1 large Cucumber
  • 1/2 tin Black Anchovies in Oil
  • 1/2 tin White Anchovies in Pickling Liquid
  • 1/2 bunch Coriander
  • 1/2 bunch Parsley
  • 1/2 bunch Basil
  • 400 ml Extra Virgin Olive Oil
  • Jamon Iberico (1 slice per person)

Method

  1. Place all ingredients in food processor.
  2. Blend until smooth.
  3. Pass through a strainer or colander into a chilled cocktail glass.
  4. Add two ice cubes and finish with a slice of jamon on top.
