Honey Granola with Labneh

The choice of seeds nuts and fruits is entirely yours, it can be varied based on what you like.

Ingredients

  • 2 cups Rolled oats
  • 1/2 cup Walnuts, chopped
  • 1/2 cup Almonds
  • 1/2 cup Cashew nuts (sunflower or sesame seeds)
  • a pinch Sea salt
  • 1/2 tsp Cinnamon
  • 1/3 cup Honey
  • 1 tsp Vanilla essence
  • 3/4 cup Dried fruit raisins, dates, figs, pear, apricots, cranberries
  • 1/2 cup Flaked coconut
  • a dash Almond oil
  • 250g Thick Greek Yoghurt
  • Watermelon ( cut into big cubes)
  • 1 tbsp Sunflower seeds

Method

  1. Put all the dry ingredients, except for the dried fruit, in a large bowl and combine.
  2. Add the wet ingredients and mix until the dry ingredients are well coated. Spread this mixture on an oiled baking tray.
  3. Set the oven to 160C and bake for 15-20 minutes or until golden. Stir occasionally to break up the lumps and turn the tray to cook the muesli evenly.
  4. Once cooked, remove from the oven and fold in the dried fruit.
  5. For the labneh, drain thick Greek yogurt for 8-12 hours in a cloth over a bowl to remove the water, the longer you drain the yoghurt the thicker it will become.
  6. Spoon the granola into a bowl.
  7. Add big cubes of sweet watermelon, a dollop of labneh, drizzle of honey and a few sunflower seeds.
