Ingredients
- 2 whole mud crabs, boiled for approximately 8 to 10 minutes, cooled then cut into segments
- 1/4 cup peanut oil
- 4 cloves garlic, roughly chopped
- 1 tablespoon ginger, roughly chopped
- 2 long red chillies, sliced
- 1 bunch spring onions sliced, save green part for the end
- 2 shallots, sliced
- 1 tablespoon sambal chilli paste
- 1/4cup low sodium soy
- 2 tablespoons hoi sin sauce
- 2 tablespoons cornflour mixed with 3 tablespoons cold water
- 2 tablespoons deep fried shallots
- 1 cup roughly chopped coriander
Method
- Gently warm the oil in a large wok.
- Add the garlic, ginger, chillies, spring onions and shallots and sauté for 2 to 3 minutes.
- Increase heat to high.
- Add the crabs and stir for 2 to 3 minutes.
- Add the sambal, soy, and hoi sin and stir until combined.
- Thicken with corn flour - you may add a little water if the sauce is too thick or strong.
- To finish stir in the deep-fried shallots, coriander, and remaining spring onions.
