I TEND TO GET CREATIVE ON A DIET AS IM EASILY BORED WITH ROUTINE AND MONOTONOUS SALADS, BLAND PUDDING MIXES OR PLAIN FRUIT. SOTHIS IS - a take on an apple pie so you dont have to feel left out, non dieters will never know....... LOW FAT AND ONLY NATURAL SUGAR!!!

Serves 2

Ingredients

  • 1/2 SHEET REDUCED FAT PUFF PASTRY THAWED
  • 2 APPLES
  • 1 PEACH
  • 2 SACHETS EQUAL
  • 2 CINNAMON STICKS- 5 CM LENGTH
  • 1/4 CUP SPRITE ZERO OR COKE ZERO
  • 2 TABLESPOONS CREAM - REDUCED FAT
  • GROUND CINNAMON

Method

  1. HEAT OVEN TO 180 C
  2. TAKE COOKIE CUTTERS AND CUT SHAPES FROM THE PASTRY
  3. PLACE ON A VERY LIGHTLY OILED TRAY AND BAKE TILL LIGHT BROWN....WATCH THEM!
  4. MEANWHILE TAKE A MICROWAVE STEAM BAG AND PUT THE CINNA STICKS IN ALONG WITH ONE SACHET OF EQUAL AND THE SOFT DRINK YOU CHOOSE
  5. PEEL AND SEGMENT THE APPLES AND PEACH WITH OUT THIER CORE/SEEDS
  6. ADD TO THE STEAMER BAG AND MICROWAVE FOR 3 MINUTES
  7. IF STILL JUICY / WATERY GO 1 MORE MINUTE
  8. ASSEMBLY-
  9. I LAYER ALTERNATELY BETWEEN A SPOON OF FILLING AND A PASTRY SHAPE
  10. THEN SPOON OVER A TABLEPOON OF EXTRA LITE CREAM
  11. SPRINKLE WITH GOUND CINNAMON AND EQUAL

I AM NOT CRAZY!......... TRUST ME ON THE SPRITE/COKE THING XXX I ACTUALY DONT LIKE CINNAMON BUT LOVE IT IN THIS I HAVE ALSO USED DIET FANTA, IT GIVES THE FILLING A GREAT COLOUR I HAVE ALSO DONE ALL THE STEPS BUT WITH WHOLE PEELED APPLES AND USED THE PASTRY AS A BASE AND THEN DRIZZLED WITH CREAM..... IT LOOKS AMAZING!
