Capsicum Frittata


Capsicum Frittata

Great for picnics, or healthy ,meal at home

Serves 4

Ingredients

  • 6 rashers bacon
  • 1 tablespoon olive oil
  • 2 medium red onions finely diced
  • 6 eggs lightly beaten
  • 1 cup grated cheddar cheese
  • 1 tablespoon plain flour
  • quarter cup fresh parsely
  • salt & pepper

Method

  1. Oven on to 180 degrees
  2. Grease ovenprrof pie dish. Mine is 23cm
  3. Grill bacon under grill tray until crisp. Drain on paper towel. Cut into small pieces.
  4. Heat oil in pan, cook inions, untill clear. Drain on paper towels
  5. Mix all ingredients together and put into pie dish.
  6. Cook for 25-30 mins.

Notes & Tips

Firm to touch when cooked, not soggy if you press back of spoon on it. Best eaten hot, but ok cold for a picnic.
