Italian Stuffed Meatloaf


Italian Stuffed Meatloaf

You can have two different versions.

One is using beef mince, and the loaf is stuffed with ham, cheese, salami and egg (optional).

Another is with chicken mince and is stuffed with sundried tomato, spinach and cheese (any cheese you like).

The beef meatloaf is a family recipie.

Serves 2 to 3

Ingredients

  • These are approximate measurements
  • 500 g Beef Mince
  • 3 tbsp Parsley
  • 1 clove of Garlic (crushed)
  • 3 tbsp parmesan
  • 3 Eggs
  • 1/2 cup Bread Crumbs
  • 50 g Salami
  • 50 g Ham
  • 100g Tasy Cheese
  • OR
  • 500 g Chicken Mince
  • 3 tbsp Parsley
  • 1 clove of Garlic (crushed)
  • 3 Eggs
  • 1/2 cup Bread Crumbs
  • 50 g Sundried Tomatoes
  • Spinach
  • 100 g Tasy Cheese

Method

  1. If including the egg in the stuffing you will need to hard boil the two eggs.
  2. Combine the mince, parsley, garlic, parmesan, breadcrumbs and remaining egg.
  3. Flatten mince in an oval shape (I usually do this on the draining rack of the sink)
  4. lay all your stuffing (Salami, Ham, Cheese, Egg OR Sundried Tomatoes, Spinach, Cheese) in the middle of the meat in a line.
  5. Wrap the meat around the stuffing until you have a loaf and all the stuffing is well sealed on the inside.
  6. Brown all sides in a frypan and put the lid on so that the loaf cooks all the way through.
  7. Slice up and serve.

Notes & Tips

Make sure that there are no holes in your mince when you wrap up all the stuffing, as all the cheese will ooze out. Some cheese will ooze out no matter how well you seal it.
