Roast Potato Salad with Seeded Maple Dressing

A sweet dish with can be enjoyed hot or cold

Serves 4 to 6

Ingredients

  • 1 x sweet potato
  • 8 x potatoes
  • 1 x garlic clove, crushed
  • 1 tablespoon seeded mustard
  • ½ cup of maple syrup

Method

  1. Pre-heat oven at 180C.
  2. Peel and chop potatoes into bite size cubes and put onto lined and oiled baking tray.
  3. Bake for approximately 15 minutes or until nicely roasted.
  4. Combine remaining ingredients to make the dressing.
  5. Once potatoes have roasted allow to cool before adding dressing for a cold dish or add straight away for a hot dish.

Can use a variety of roasting vegestables ie: pumpkin or carrot.
