Mediterranean Chicken

Quick and easy taste of the Mediterranean.
Serves 4 to 6
Ingredients
4 Chicken breast fillets
olive oil
1 spanish onion chopped
2 zucchini diced
2 tablespoons tomato paste
¼ cup sundried tomatoes
¼ cup stuffed olives
1 tablespoon capers
½ cup white wine
1 410 g can of chopped tomatoes
salt and pepper

Method
Trim chicken breast fillets.
Pour olive oil into large frypan and heat up.
Add chicken, brown both sides.
Add spanish onion, zucchini and tomato paste, stir to blend ingredients.
Add rest of ingredients and simmer with the lid on for approximately 20 minutes.
