Homemade Lebanese Chicken Soup

This is a fantastic recipe for kids & big kids especially for fussy eaters & if you sick children who wont eat

Serves 6

Ingredients

  • 1 Whole chicken skin left on
  • 50g angel hair pasta broken into small pieces (from a lebanese grocer even better)
  • 3 cloves garlic crushed
  • 1 cinnamon stick
  • 2 tablespoons butter
  • salt
  • pepper (optional)

Method

  1. Wash chicken & place in a large pot
  2. Top with COLD water & 2 tablespoons salt
  3. Bring to the boil skimming off any muck for around 15min or till there is no muck
  4. Drain in a colander & rinse under HOT water
  5. Put back in pot & cover with HOT water along with another 2 tablespoons salt
  6. Add cinnamon stick
  7. Bring to the boil & then turn heat down half way
  8. Simmer till chicken is tender
  9. Drain chicken KEEPING ALL THE LIQUID & CINNAMON STICK
  10. Remove the skin & take off most of the chicken breaking into small pieces
  11. Put liquid back into clean pot along with chicken bits & cinnamon stick
  12. Meanwhile melt butter in a frying pan & add garlic & pasta
  13. Toss in butter approx 5 minutes till pasta golden brown but not burnt
  14. Add to chicken
  15. Add a dash of pepper & taste for more salt
  16. Simmer for 15mins

You may add less chicken if you want more of a broth
