Salmon Casserole

Secret family favorite always made every Good Friday

Serves 4 to 6

Ingredients

  • 1 x 400g can Pink or Red Salmon
  • 1 x diced onion
  • 1 x diced apple (small)
  • ½ x cup uncooked rice
  • 1 x 400g can Vegetable Soup
  • 1 x cup milk
  • 1 x cup crushed weetbix or cornflakes
  • 1 x teaspoon curry powder
  • melted butter

Method

  1. Cook the onion and apple in some melted butter
  2. Add the soup, milk & rice
  3. Stir to combine, bring to boil
  4. Add the salmon & combine
  5. Transfer to casserole dish
  6. Combine crushed cereal, curry powder and melted butter, then sprinkle on top of casserole mixture
  7. Bake in oven 180C for 30 minutes
