Salmon Casserole

Secret family favorite always made every Good Friday
Serves 4 to 6
Ingredients
1 x 400g can Pink or Red Salmon
1 x diced onion
1 x diced apple (small)
½ x cup uncooked rice
1 x 400g can Vegetable Soup
1 x cup milk
1 x cup crushed weetbix or cornflakes
1 x teaspoon curry powder
melted butter

Method
Cook the onion and apple in some melted butter
Add the soup, milk & rice
Stir to combine, bring to boil
Add the salmon & combine
Transfer to casserole dish
Combine crushed cereal, curry powder and melted butter, then sprinkle on top of casserole mixture
Bake in oven 180C for 30 minutes
