Coconut Ice

An easy to make treat ideal for children ... and the "big kids".

Serves 32

Ingredients

  • 300g shredded coconut
  • 430g icing sugar, sifted
  • ¼ cup cornflour
  • 1 x 395g tin of condensed milk
  • Food colouring/s

Method

  1. Place the shredded coconut, icing sugar and cornflour in a bowl and stir. Add the condensed milk; stir until well combined.
  2. Divide the mixture into two and add food colouring/s.
  3. Spread into a 20cm square tin in two layers. Allow to set and cut into small squares.

Notes & Tips

Pink and white are the traditional colours for coconut ice but this can easily be changed according to the occasion or season, for example, red and pink for Valentine’s Day or red and green for Christmas. For an extra festive touch add glace cherries between the two layers.
