Chocolate Fudge Buttermilk Cupcakes


Chocolate Fudge Buttermilk Cupcakes

These cupcakes are quick and simple. Kids of all sizes love them.

Serves 28 to 30

Ingredients

  • 4 cups Plain Flour
  • 2 tsp Baking soda
  • 2 tsp Baking powder
  • 1½ tsp Salt
  • 1 cup Cocoa
  • 1 cup Hot water
  • 250 g Unsalted butter
  • 2 cups Caster Sugar
  • 4 eggs
  • 2 cups Buttermilk
  • 1 tsp vanilla extract
  • 30 muffin/cupcake cases
  • 12 muffin/cupcake baking tray
  • 1 cup cream
  • 300g dark chocolate

Method

  1. Preheat oven to 180C
  2. Sift dry ingredients together in a bowl and set aside
  3. Stir the cocoa and hot water together in a jug to make a thick paste
  4. Cream butter and sugar together in a food processor or electric beater
  5. Add eggs one at a time to mixture and blend until all combined
  6. Add buttermilk and vanilla to mixture and blend.
  7. Add cocoa paste to mixture and blend until combined
  8. Add dry indgredients to the batter until just combined.
  9. Spoon mixture into prepared cupcake baking tray. Do not over fill .
  10. Bake for 18-20 or until tops are set and a skewer comes out clean.
  11. Cool on a wire rack
  12. For Ganache/Icing
  13. Bring cream to the boil and remove from heat
  14. Add chocolate and stir until melted
  15. Dip cooled cupcakes into Ganache,decorate as you wish and allow to set.
