Pineapple and Ginger Granita with Toasted Coconut
- 1 sweet-variety Pineapple
- 2 knobs Ginger peeled
- sugar syrup to taste
- shredded Coconut toasted brown
- Put the pineapple through a juicer with the ginger.
- Finish with sugar syrup to taste.
- Pour into a shallow dish.
- Freeze until solid, then break up granita with a fork.
- Serve in martini glasses and sprinkle with toasted coconut.
