Iranian Khoulash

Minty, tomato beef casserole served with yoghurt infused rice.
Serves 4
Ingredients
1kg Beef, first cut of the
Round or stew meat, cut in
2cm cubes
1 ts Salt
1 ts Pepper
2 tb Paprika
2 tb Butter
2 Onions, diced″
1 ts Marjoram
1 ts Caraway seeds
1/2 cup Mint leaves chopped
1/2 cup Continental Parsley chopped
I cup Sour Cream
3 cups Basmati rice (cooked absorption method)
1 cup traditional yoghurt
3 tb spoon soaked sultanas
1/4 cup mint leaves
1/4 cup parsley leaves

Method
Brown meat, onions in butter for 10 mins.
Add Pepper, salt, paprika, Marjoram and Caraway seeds.
Simmer for 45 mins.
Add mint and parsley and sour cream and simmer for a further 25mins.
Cook rice then add yoghurt and sultanas, mint and parsley... mix.
Serve Khoulash with serve of yoghurt rice and garnish with sprig parsley and mint.
