Chichen Hot Pot.

A very easy recipe using whatever veggies you have in the fridge, plus a bbq chicken with a mashed potato topping.

Serves 4

Ingredients

  • 1 Bbq chicken
  • Mashed potato
  • Veggies including-broccoli,celery ,sweet corn, peas,mushrooms, carrots- whatever you have in the fridge(frozen is ok too)
  • 1 can of condensed chicken soup.
  • 1 300ml container of light sour cream.
  • salt and pepper to taste.

Method

  1. Take the skin off the chicken, then break the chicken up into bight sized pieces.Place in casserole dish.Microwave chosen veggies for 5 mins to soften them.Place them in the casserole dish with chicken.Mix together the soup and sour cream, then pour over chicken and veggies.Mix well.Season then top with mahed potato.Place in a moderate (180-190) oven until golden brown on top and mixture heated through.
